Recipe: Lemon Coconut Raspberry Crepes

Crepes make everything better and our Gypsy babe @unicorntraveler  is sharing her delicious recipe that will be your next weekend obsession.  



Lemon Crepes

4 ounces of cream cheese softened.

Butter for Pan

4 Large organic eggs

¾ Cup almond flour

¼ Cup almond milk

½ tbsp. lemon zest

Pinch of salt

5 drops of Stevia

4 drops of Lemon Essential Oil.

Delicious Filling

1 cup Strawberry or Raspberries or Blackberries. I used Raspberries for this pic.

1 banana

½ cup of almond milk

¼ cup of coconut pieces


Garnish Topping

More coconut pieces for sprinkling.

More whole berries for topping.

1/3 tbsp lemon zest.



Prep for filling

Wash 1 pack of berries, place in a bowl to freeze overnight.

Peel banana and cut into a few pieces to also freeze overnight.

How to -

Blend all ingredients together for the crepes!

Place butter in a pan and pour a layer the size of the pan. When the edges look ready, flip the crepe and cook the other side.

Blend all delicious filling ingredients and pour on the crepe!

Garnish with coconut pieces and some frozen berries and lemon zest if desired.
